Udon Noodles

 

Making Udon:



Make 2 servings - 2 人份量 Ingredients: 300 grams - 2 cups - all-purpose flour 150 ml - 2/3 cup - 10 tbsp - cold water 30 ml - 0.12 cup - 2 tbsp - warm water 6 grams (1 teaspoon) salt

*I have added a bit of oil on my hand to knead it. It was really dry so had a bit more oil to make it better.
**One thing I did though with the last fold and before cutting it.. I put some oil in between and actually didn't fold it right away Made it long rectangular and did the fold and finish a bit more rolling and then cut.

TIP : If you don’t plan using them right away, toss with a little drizzle of oil to keep them from sticking together. This should separate the udon noodles and keep them from drying out and clumping together.

Ingredients

  • 2 packets udon noodles
  •  cups mushrooms sliced
  • 3 bok choy quartered or halved
  •  white onion chopped
  • 2 stalks scallions
  • ½ lb ground meat beef, chicken, turkey, pork
  • 1 Tablespoon avocado oil

Yaki Udon Noodle Sauce

  •  Tablespoons dark soy sauce
  • 2 Tablespoons oyster sauce
  • 1 Tablespoon mirin
  • 2 teaspoons brown sugar
  • ½ teaspoon rice wine vinegar

Instructions

  • Mix all the ingredients for the sauce in a small bowl and set aside.

Cook the Udon Noodles

  • Remove your udon noodles from its package and add it to a pot of boiling water. Frozen udon noodles can be added directly to the pot of boiling water. Stir gently until your udon noodles are separated and pliable. This should take 1 - 2 minutes. They come precooked so avoid overcooking them as they can get too soft.
  • Rinse and drain your noodles under cold water. If not using right away, drizzle on a little bit of oil to keep them from sticking.

Stir Fry

  • Heat your pan over high heat and add the oil. Add in the ground meat and stir fry for 1 minute before adding the rest of your vegetables. Stir fry together for 1 minute and then add in the noodles and sauce. Continue stir frying for 3 - 4 minutes or until well combined. Serve immediately.
