Tartine Flambee Recipe

I think this CoVid Thing is making me cook and try out different recipes and last night, I tried Tartine Flambee, which is kinda like a flat bread or thin pizza which I have tried when I was going around Alsace, France.

It was very simple recipe and kinda easy to make.  There are a lot of various recipes, but I got the simplest one. Added the recipe below (with credit to the article) and the picture of the finished product.

IngredientsDough
  • 2 cup flour all purpose
  • 1/2 tsp salt
  • 1/2 cup warm water
  • 2 tbsp oil
Garnish
  • 1/2 lbs bacon thinly sliced and cut in small pieces
  • 1 large onion thinly sliced
  • 1/2 cup creme fraiche see footnotes
  •  salt, pepper, nutmeg

Instructions

Dough
In a large bowl, place flour and salt. Pour water and oil in the middle and combine with your hands. Kneed the dough on a counter top until no longer sticky (adding more flour or water if necessary) and set aside while preparing garnishes.

Pie

  • Preheat oven to 475 F. Slice your bacon and onion. Cook slightly the bacon just to melt some of fat, but without browning. Set bacon aside on a dish with absorbent paper.
  • Separate the dough in 2. Roll the dough as thinly as possible on a floured surface. Transfer on a floured baking pan.
  • Spread the cream all over the dough. Add onions and cooked bacon. Sprinkle salt, pepper and nutmeg.
  • Cook your pie in a your hot oven and watch it carefully after 5 min. Just until the edges of dough and toppings are golden. If dough is too soft, transfer to the grill of the oven to continue the cooking.
  • Let sit on a cutting board for 5 min before slicing and serving. Serve hot!

Recipe Notes
This easy to do pie can be customized with a lot of different toppings, but this is the original recipe. Serve it as a snack, appetizer or starter alongside a green salad.
If you can't find creme fraiche, you can use sour cream or this substitute: 1 cup of high fat plain yogurt, with 1 egg yolk and one tbsp of oil, blended well together.
